Vanilla pearls for food manufacturing

Vanilla Fair's industrial Vanilla Pearls are uniform, dark brown beads scraped from split Madagascar vanilla beans, with an intense vanilla taste and a sweet, lingering finish. They are made for manufacturers who want concentrated vanilla flavour in a uniform format that is easy to dose on a production line.

From cured bean to pearl

The raw material is Madagascar Vanilla planifolia cured by the Bourbon method, whose four stages are killing, sweating, drying and conditioning1. Green pods contain almost no free vanillin: it is stored as glucovanillin, mainly around the seeds, and released as curing breaks down the cell compartments1,3. In our own curing, pods are dipped at 63 °C for about 3 minutes, then sweated for 48 to 72 hours above 40 °C before drying.

Specifications to agree before production

  • Identity. "Vanilla pearl" is a trade name: products sold under it range from beads of vanilla to pastes of seeds and concentrate4,5. Ask for the full composition.
  • Vanillin and moisture. ISO 5565-1:1999 notes that pods usually show 1.6 to 2.4% vanillin on a wet basis2. Any figure you receive should state its test method and moisture basis.
  • Split beans. The same standard treats split pods as sub-grade B of each quality category2; your specification can name the beans used.
  • Fresh or exhausted. Seeds recovered after extraction are sold too, with a milder aroma6; the specification should say which you receive.
  • Traceability. In the EU, a food may not be marketed without a lot indication, with limited exemptions7: agree the lot and date format for your intake checks.
